Steamed cake with black sesame
1. Prepare the black sesame powder, beat the egg white and yolk in two clean basins without water and oil respectively for standby;
2. Heat the clear water with a small fire until it leaves the fire when there is a small bubble, and add oil for emulsification;
3. Pour in flour while it is hot, and mix until no dry powder is found;
4. Add egg yolk, stir well, and pour in the ground black sesame powder;
5. Mix well, the yolk paste can flow down naturally;
6. Pour sugar into the egg white in three times, and beat it with the electric beater until it is dry foaming, that is to say, lift the beater, the egg cream has short sharp corners;
7. Take 1 / 3 of the whipped egg white cream and put it into the yolk paste. Turn it up from the bottom and cut it evenly;
8. Then return to the remaining protein cream;
9. Use the same method to mix well. Do not circle and mix, which will eliminate bubbles;
10. Pour the mixed cake paste into the bottom steaming cake mold (I use the steaming cake mold of French bakers, which is easier to be demoulded by spreading a piece of oil paper on the bottom), drop the mold on the desktop a few times, and shake out the internal bubbles;
11. Cover a plate or plastic wrap to prevent water vapor from dripping. Boil the water in the pot in advance, put on the steaming drawer, steam for 40-50 minutes in medium high temperature, the time of steaming for different molds will be different, remember that the water in the pot must be filled enough, do not open the cover and add water halfway;
12. When it's time to turn off the fire and open the lid, you can see that the steamed cake will not shrink at all. It's a good height for two eggs. Steamed cake is the most delicious food. If you can't finish it, you can put it in the refrigerator for cold storage, and then heat it with water.
